Everyone, well, almost everyone I know was obsessed with baking banana bread during the 2020 lockdown. I can’t remember how many times I searched for recipes so that I could also make mine.
I’ll be sharing my own special recipe for people like me who are on a gluten and dairy-free food journey. Healthy living is not easy, but the results are worth it.
Anyway, this banana bread is easy to make. The ingredients are things you already have in your kitchen. They can also be easily bought in the store, unlike other gluten-free foods.
The best way to eat this is by slathering peanut butter over it or having a nice cup of mint green tea by the side.

Ingredients
1 ½ (150 g.) cup Regular Plain Oats
2 ripe bananas
2 eggs or 2 tbsp flax seed powder in 1/3 cup water
1 tsp Vanilla Extract
1/3 cup (75 ml or 75 g) cooking oil or melted oil
½ cup packed brown sugar
¼ cup (60 ml) Almond or Oat milk
1 tsp. cinnamon powder (optional)
1 tsp. baking soda
½ tsp. salt
1/3 cup chopped almonds & walnuts, coconut flakes & chocolate chips (optional)
Preparation
- Preheat your oven at 350-degree Fahrenheit /180-degree Celsius.
- Prepare your baking tray, oil the pan. You can even go a step further to line your baking pan with oiled foil or baking paper.
- The next step is to prepare the wet ingredients. Mashup the very ripe and sweet bananas in a bowl with a fork.
- Break the eggs into a large mixing bowl, add the vanilla extract, and then whisk the mixture till it is fluffy. This process should take at least 2 minutes.
- After beating the eggs, add the cooking oil (I love to use olive oil), add the sugar, then combine all ingredients together.
- Once it is properly combined, add the mashed bananas, and mix it in very well.
- Add your dairy-free milk to the mixture and whisk again till it is properly combined. Your good ingredients are ready now.
- For the dry ingredients, you can blend your regular rolled oats or you can use the already ground oats.
- Add your cinnamon powder, baking soda, salt and mix in a bowl.
- Add your chopped almonds, walnuts, coconut flakes or chocolate chips.
- Gently add the dry ingredients to the wet ingredients and mix till they are properly combined.
- Transfer into the baking pan and put in the oven to bake for 50 – 60 minutes.
- Once baked, bring it out of the oven and leave to cool for 15 minutes before slicing it up.
