Disclaimer:
This meal, although tagged ‘comfort food’, should only be eaten sparingly, if you don’t want to discover the discomfort of your stomach getting into bed 3 seconds after you do. 🙂
Ingredients:
- ½ stick of Salted butter (NOT Margarine oh.)
- 2 tbs of Corn flour.
- 1 cup of Whole milk.
- 1 cup of grated parmesan cheese.
- 1 cup of Cheddar cheese.
- Plenty Chicken strips (sans skin and bones).
- Plenty Shrimps (pan seared).
- ½ bag of Macaroni (if you are using dangote).
- 1 spoon of Ground pepper.
- 2 Knorr chicken cubes.
- 2 tbs olive oil. (we might as well try to be a bit healthy)
Instructions:
Bring to boil 3 cups of water, add the macaroni, Knorr cubes and olive oil.
When macaroni is *al dente*, drain and keep the liquid in a bowl.
In another pot (or you can wash the same pot and reuse), melt the butter and add the cornflour. Stir in milk and keep stirring.
When the mixture (I think this is what they call alfredo sauce) thickens, pour in the cups of cheese and let them melt into the mixture.
Add cooked macaroni and if mixture is too thick, add a bit of the strained liquid from the macaroni.
Add pepper, shrimps and chicken strips.
An optional step is to transfer the mac and cheese into a casserole dish and oven bake, but at this point, I’d have eaten the food almost half way and there’s just no point.
Total prep time? About 20 mins, if you don’t put it in the oven.
