Hello and happy new year to you. Welcome back to what I pray will be an amazing year for us all. What better way to begin the year than with something simple but delicious? That’s exactly what you get when you make a hearty Spaghetti Carbonara dish. It’s something everyone should know how to throw together after a long day at work.
What you will need:
- Spaghetti
- Olive Oil
- Bacon (and or thick cut pancetta)
- Parmesan Cheese
- 2 eggs
- cracked black pepper
- salt
- garlic
Step 1:
Boil the spaghetti in a pot of water drizzled with some olive oil until its “al –dente” i.e. the spaghetti shouldn’t be completely cooked. Set aside in some water once done
Step 2:
Chop the Pancetta and/or spaghetti and sautee till its cooked in a pan. Throw the garlic into the mix so that the flavours are fully infused together.
Step 3:
Break the eggs in a bowl. Add the cheese and mix together. The amount of cheese you want to use is up to you. I love cheese (even though, its always a problem for me) so I piled it high in the mix.
Step 4:
Add the spaghetti to the bacon/pancetta mix in the pan and stir together till they are well blended then slowly drizzle the egg and cheese mix unto the spaghetti in the pan. Turn off the heat and continue to stir together so that the heat from the spaghetti cooks the egg and cheese mixture.
Step 5:
Serve with cracked black pepper as a garnish and enjoy!
