This December, I was feeling for something sweet and easy. The days seem to be getting shorter. I really wanted to show you all my thanksgiving turkey, but I only managed to take photos of the finished product … next time I promise.
But going back to sweet and easy
I saw a recipe for Nigerian pancakes on @Dooneyskitchen and was inspired. I haven’t had those in a very long time and I had all the ingredients at home so I went for it. I changed a few things though
What you need:
- Flour
- 2 eggs
- condensed milk
- sugar
- nutmeg (if you have any)
- black pepper
- vanilla extract
- Water
Process
Step 1
Throw it all into a blend (ignore the cream cheese in the photo). Add more flour if you want more of an American consistency
Step 2
Test the batter, if it’s too think, add some water. Not thick enough? Add some flour.
Step3
Add a bit of olive oil to the pan and then pour the batter in. This Is going to cook very quickly so don’t step away. Flip the pancake over when it starts to bubble. I put very very little oil, I don’t like the idea of “frying” the pancake as if its meat. I even stopped adding oil at a point, because I used a non-stick frying pan.
(couldn’t help myself it still looks American, lol)
Step 4
Ready to serve!. I always smear the pancakes with butter as soon as they are done so the butter melts into the pancake. Then I poured icing sugar and syrup.
