It was literally sugar and spice and everything nice.

Right around 2007, my now sister-in-law was experimenting in the kitchen at my brother’s apartment with her grandmother’s cookbook trying to make something she called a “Blondie” (she’s Greek by the way, so I was very much excited to learn this new thing).
We finished the first batch before it left the kitchen so she had to make a second. With some cold milk, the second batch went down equally as fast. It was sweet, it was gooey in the middle, it was literally sugar and spice and everything nice.
So when I was asked to make a dessert, this was the first thing that came to mind; well second after “death-by-chocolate”. I found a not-so-greek recipe online that mimicked the Greek recipe and hereby share below:
Ingredients:
1/2 cup of butter, melted
1 cup of tightly packed dark brown sugar
1 egg, lightly beaten
1 teaspoon of vanilla
1/2 teaspoon baking powder
1/8 teaspoon of baking soda
Pinch of salt
1 cup of all-purpose flour
Steps:
1 Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.
2 Add the egg and vanilla extract and whisk.
3 Add the flour, baking soda, baking powder, and salt, mix it all together. Add the butterscotch chips or other mix-ins.
4 Pour into the pan and spread evenly. Bake for 25-30 minutes or until a tester inserted into the center comes out clean. Allow to cool.
Cut into squares or rectangles and serve.
