About 20 years ago, this would have made me very happy, because I knew children’s day was coming up; my primary school made a big deal about it. So to commemorate those happy times, I have recreated a meal from my childhood.
Back in the day, if you found N50, you found a lot of money. That was my lunch money and more – I was totally balling. And if we were at home on a Saturday morning when our parents were out, my brothers and I would splurge trying to recreate what my mom called the “Obembe burger” lol. Its basically a loaf of agege bread with every left-over in the fridge scrambled into some eggs.
So here goes:
Ingredients:
- A loaf of soft (hot, if you can find it) bromate-free agege bread
- Slices of cheese (cheddar works best)
- At least 4 eggs
- Every left over piece of protein in your fridge
- Milk
Step 1
Slice the bread lengthwise and place two slices of cheese on it (if you have a lot of stuff in your fridge, slice it in two places)
Step 2
Place the bread and cheese in the oven with the cheese exposed to the heat. Remove once the bread is toasted and the cheese has bubbled up and melted.
Step 3
Break the 4 eggs and whisk with some milk
Step 4
Sautee the leftover meat (for me this was sausage, corned beef bacon +onions and peppers – at other times this has been sardines, actual meat from the pot and chicken in stew)
Step 5
Pour the egg mix in the sautéed mixture, stir until well done
Step 6
Layer this on top of the bread, fold and enjoy!
