Yes I know it’s unusual and you’ve probably never ‘celebrated’ it before, but to commemorate All Hallows Eve (celebrated widely elsewhere), I decided to make something unusual – design…err green stew!
I actually have a legit designer stew recipe but I forgot the critical ingredient when I went shopping; the palm oil. Luckily for you, I had some olive oil lying around so not only is this an unusual Halloween themed green stew, its also healthy!
Ingredients:
- 4 Green Bell peppers (I used the local kind)
- 2 large cloves of garlic (I love the taste of garlic, you can use 1 or chuck it entirely)
- 5 medium sized yellow onions
- 1 pack of chopped goat meat (you could use a different protein and or add assorted meat chopped into little bits)
- 1 teaspoon fool of Italian seasoning
- 3 cubes of knorr
Step 1
- Heat the meat in a medium sized pot over medium heat until it starts to sweat then add half a chopped onion to the mix and two cubes of knorr.
- Cover the mix up and let it continue to sweat
Step 2
- Blend the peppers, rest of the onions and garlic until smooth
Step 3
- Pour the blended mix into the sweating meat mix. Add two spoon fulls of olive oil and cover again.
- Add the last knorr cube and stir as needed
The stew is ready when it becomes beady and the meat is soft. Serve over white rice…hot! J
